You won't often come across Thomas Bridanne, the Chef's second in command, barely thirty years old, who only feels at home in the kitchen.
Timid, reserved and enthusiastic, Thomas has worked in great Michelin-starred establishments. He was first at Bernard Loiseau's in Saulieu until 2012, next at the Restaurant La Mère Brazier in Lyon, then at the Auberge du Jeu de Paume in Chantilly before joining us in Carcassonne.
It's difficult to get him to talk about himself though his colleagues in the kitchen often tease him as he loves thinking up creative daily specials ... but by using an awful lot of techniques.
Once when he was asked to narrate a happy memory, Thomas proudly recalled the chef's remark when Thomas showed him his creation of the day:
"You're crazy to make stuff like that!"
